Veggie and Feta Stuffed Peppers

These delicious stuffed peppers are filled with a flavorful mixture of vegetables and feta cheese.

Ingredients

  • Salt and pepper - To taste
  • Dried oregano - 1 teaspoon
  • Feta cheese - 1 cup, crumbled
  • Spinach - 2 cups, chopped
  • Garlic - 2 cloves, minced
  • Yellow squash - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Onion - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Bell peppers - 4 large

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the onion, zucchini, yellow squash, and garlic. Cook until the vegetables are tender, about 5 minutes.
  5. Add the spinach and cook until wilted, about 2 minutes.
  6. Remove from heat and stir in the feta cheese, dried oregano, salt, and pepper.
  7. Stuff the bell peppers with the vegetable and feta mixture.
  8. Place the stuffed peppers in a baking dish and cover with foil.
  9. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and golden.
  10. Serve hot and enjoy!
