These stuffed bell peppers are filled with a mixture of quinoa, black beans, and corn, making them a hearty and healthy vegetarian snack.

Ingredients

  • Cheese - 1 cup, shredded
  • Salt and pepper - To taste
  • Chili powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Onion - 1, diced
  • Tomatoes - 2, diced
  • Corn - 1 cup, frozen or fresh
  • Black beans - 1 can, drained and rinsed
  • Quinoa - 1 cup
  • Bell peppers - 4, halved and seeds removed

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the quinoa according to the package instructions.
  3. In a large skillet, heat some oil over medium heat. Add the onion and garlic and cook until soft.
  4. Add the black beans, corn, tomatoes, cumin, chili powder, salt, and pepper. Stir to combine.
  5. Add the cooked quinoa to the skillet and stir until well combined.
  6. Spoon the quinoa mixture into the bell pepper halves and place them in a baking dish.
  7. Top each pepper half with some shredded cheese.
  8. Bake for 25-30 minutes, or until the peppers are soft and the cheese is melted.
