Quinoa Stuffed Peppers

These quinoa stuffed peppers are a healthy and delicious meal, packed with protein and fiber.

Ingredients

  • Salt and pepper - To taste
  • Cheese - 1 cup, shredded
  • Cilantro - 1/4 cup, chopped
  • Tomatoes - 2, chopped
  • Corn - 1 cup, frozen or fresh
  • Black beans - 1 can, drained and rinsed
  • Garlic - 2 cloves, minced
  • Onion - 1, chopped
  • Olive oil - 2 tablespoons
  • Bell peppers - 4 large
  • Quinoa - 1 cup

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the quinoa according to the package instructions.
  3. Cut the tops off the peppers and remove the seeds. Place the peppers in a baking dish.
  4. Heat the olive oil in a pan over medium heat. Add the onion and garlic and cook until soft.
  5. Add the black beans, corn, tomatoes, and cooked quinoa to the pan. Stir to combine.
  6. Remove the pan from the heat and stir in the cilantro and half of the cheese. Season with salt and pepper.
  7. Stuff the peppers with the quinoa mixture and top with the remaining cheese.
  8. Bake for 30 minutes, or until the peppers are soft and the cheese is melted.
