Ingredients

  • Black pepper - To taste
  • Salt - To taste
  • Extra virgin olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Fresh mint - 1/4 cup, chopped
  • Fresh parsley - 1/2 cup, chopped
  • Red onion - 1 small, thinly sliced
  • Green bell pepper - 1, diced
  • Cucumbers - 2 large, diced
  • Tomatoes - 4 medium, diced

Instructions

  1. In a large bowl, combine the diced tomatoes, cucumbers, green bell pepper, red onion, chopped parsley, and chopped mint.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to make the dressing.
