South African Curry

This South African curry is a flavorful and aromatic dish made with a blend of spices, tender meat, and vegetables.

Ingredients

  • Fresh cilantro - For garnish
  • Salt and pepper - To taste
  • Chicken or vegetable broth - 1 cup
  • Coconut milk - 1 cup
  • Tomatoes - 2 large, diced
  • Carrots - 2 medium, peeled and sliced
  • Potatoes - 2 medium, peeled and diced
  • Chicken or beef - 500 grams, cut into bite-sized pieces
  • Cayenne pepper - 1/4 teaspoon
  • Turmeric - 1/2 teaspoon
  • Coriander - 1 teaspoon
  • Cumin - 1 teaspoon
  • Curry powder - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1 large, finely chopped
  • Vegetable oil - 2 tablespoons

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Add the minced garlic and grated ginger, and cook for another 2 minutes.
  4. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper. Stir well to coat the onions and spices.
  5. Add the meat to the pot and cook until browned on all sides.
  6. Add the diced potatoes, sliced carrots, and diced tomatoes. Stir to combine.
  7. Pour in the coconut milk and chicken or vegetable broth. Season with salt and pepper to taste.
  8. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 45 minutes to 1 hour, or until the meat is tender and the flavors have melded together.
  9. Serve the South African curry hot, garnished with fresh cilantro. Enjoy with rice or naan bread.
