Tori Paitan Ramen

Tori Paitan Ramen is a rich and creamy chicken-based ramen soup with tender chicken slices, noodles, and flavorful toppings.

Ingredients

  • Nori seaweed - 2 sheets, shredded
  • Soft - boiled eggs - 2
  • Green onions - 2, sliced
  • Ramen noodles - 2 packs
  • Salt - To taste
  • Mirin - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Onion - 1, chopped
  • Ginger - 1-inch piece, grated
  • Garlic - 4 cloves, minced
  • Chicken breasts - 2, boneless and skinless
  • Chicken bones - 1.5 lbs

Instructions

  1. In a large pot, add the chicken bones, chicken breasts, garlic, ginger, onion, soy sauce, mirin, and salt.
  2. Cover with water and bring to a boil. Reduce the heat and simmer for 1 hour, skimming off any impurities that rise to the surface.
  3. Remove the chicken breasts and shred them. Set aside.
  4. Strain the broth and discard the solids. Return the broth to the pot and keep warm.
  5. Cook the ramen noodles according to the package instructions. Drain and set aside.
  6. Divide the cooked noodles into serving bowls. Top with the shredded chicken, green onions, soft-boiled eggs, and shredded nori seaweed.
  7. Ladle the hot broth over the noodles and toppings.
  8. Serve immediately and enjoy!
