Tomato, Cucumber, and Onion Tart

This refreshing tart is perfect for a summer lunch or dinner. It's made with fresh tomatoes, cucumbers, and onions, and a flaky pastry crust.

Ingredients

  • Salt and pepper - To taste
  • Balsamic vinegar - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Fresh basil - 1/4 cup, chopped
  • Feta cheese - 1/2 cup, crumbled
  • Red onion - 1 small, thinly sliced
  • Cucumbers - 2 medium, sliced
  • Tomatoes - 2 large, sliced
  • Pastry crust - 1, store-bought or homemade

Instructions

  1. Preheat the oven to 375°F.
  2. Roll out the pastry crust and place it in a 9-inch tart pan. Trim the edges and prick the bottom with a fork.
  3. Bake the crust for 10 minutes, or until lightly golden.
  4. Arrange the tomato, cucumber, and onion slices on top of the crust.
  5. Sprinkle the crumbled feta cheese and chopped basil over the vegetables.
  6. Drizzle the olive oil and balsamic vinegar over the tart.
  7. Season with salt and pepper to taste.
  8. Bake for 30 minutes, or until the vegetables are tender and the cheese is melted and golden.
  9. Let the tart cool for a few minutes before slicing and serving.
