Chilate Con Carne

Chilate con Carne is a traditional Mexican stew made with beef, vegetables, and spices.

Ingredients

  • Lime wedges - For serving
  • Fresh cilantro - 1/4 cup, chopped
  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Beef broth - 4 cups
  • Tomatoes - 2, diced
  • Potatoes - 2, diced
  • Carrots - 2, sliced
  • Bell pepper - 1, chopped
  • Garlic - 3 cloves, minced
  • Onion - 1 large, chopped
  • Beef stew meat - 1.5 pounds, cubed

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the beef stew meat and cook until browned on all sides.
  3. Add the chopped onion, minced garlic, and chopped bell pepper. Cook until the vegetables are softened.
  4. Add the sliced carrots, diced potatoes, and diced tomatoes. Stir to combine.
  5. Pour in the beef broth and add the cumin, paprika, salt, and pepper. Stir well.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, or until the beef is tender.
  7. Stir in the chopped cilantro and cook for an additional 5 minutes.
  8. Serve hot with lime wedges on the side.
