Thai Peanut Curry Noodles

These Thai-inspired peanut curry noodles are packed with flavor and make a delicious and satisfying meal.

Ingredients

  • Roasted peanuts - 1/4 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Vegetables (such as bell peppers, carrots, and broccoli) - 2 cups, sliced
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Brown sugar - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Red curry paste - 2 tablespoons
  • Coconut milk - 1 can (13.5 ounces)
  • Peanut butter - 1/2 cup
  • Rice noodles - 8 ounces

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat some oil over medium heat.
  3. Add the minced garlic and grated ginger, and cook for 1-2 minutes until fragrant.
  4. Add the sliced vegetables to the skillet and stir-fry for 3-4 minutes until they start to soften.
  5. In a separate bowl, whisk together the peanut butter, coconut milk, red curry paste, soy sauce, lime juice, and brown sugar until well combined.
  6. Pour the peanut curry sauce into the skillet with the vegetables and stir to coat.
  7. Add the cooked rice noodles to the skillet and toss everything together until the noodles are well coated with the sauce.
  8. Cook for an additional 2-3 minutes until heated through.
  9. Remove from heat and garnish with fresh cilantro and chopped roasted peanuts.
  10. Serve hot and enjoy!
