Thai Green Prawn Curry

This Thai green prawn curry is a flavorful and aromatic dish made with fresh prawns, green curry paste, coconut milk, and a variety of spices.

Ingredients

  • Salt - To taste
  • Vegetable oil - 2 tablespoons
  • Bell peppers - 1, sliced
  • Green beans - 1 cup, trimmed and halved
  • Red chili peppers - 2, sliced
  • Thai basil leaves - 1/4 cup, chopped
  • Kaffir lime leaves - 4 leaves, torn
  • Sugar - 1 teaspoon
  • Fish sauce - 2 tablespoons
  • Coconut milk - 1 can (400 ml)
  • Green curry paste - 2 tablespoons
  • Prawns - 500 grams

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the green curry paste and cook for 1-2 minutes until fragrant.
  3. Add the prawns and cook until they turn pink and are cooked through, about 3-4 minutes.
  4. Add the coconut milk, fish sauce, sugar, kaffir lime leaves, and sliced chili peppers. Stir well to combine.
  5. Bring the mixture to a simmer and cook for 5 minutes.
  6. Add the green beans and bell peppers. Cook for an additional 2-3 minutes until the vegetables are tender-crisp.
  7. Season with salt to taste.
  8. Remove from heat and stir in the chopped Thai basil leaves.
  9. Serve the Thai green prawn curry hot with steamed rice or noodles.
