Thai Green Curry Sauce

This Thai green curry sauce is a flavorful and aromatic sauce made with green curry paste, coconut milk, and various spices.

Ingredients

  • Fresh cilantro leaves - 1/4 cup, chopped
  • Fresh basil leaves - 1/4 cup, chopped
  • Lime juice - 1 tablespoon
  • Sugar - 1 teaspoon
  • Fish sauce - 1 tablespoon
  • Green beans - 1 cup, trimmed
  • Broccoli florets - 1 cup
  • Carrot - 1, sliced
  • Bell pepper - 1, sliced
  • Onion - 1 medium, finely chopped
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Vegetable oil - 2 tablespoons
  • Coconut milk - 1 can (400ml)
  • Green curry paste - 2 tablespoons

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add garlic, ginger, and onion. Sauté until fragrant and onion is translucent.
  3. Add green curry paste and cook for 1-2 minutes, stirring constantly.
  4. Pour in coconut milk and stir well to combine with the curry paste.
  5. Add bell pepper, carrot, broccoli, and green beans. Cook for 5 minutes, or until vegetables are tender-crisp.
  6. Stir in fish sauce, sugar, and lime juice. Cook for an additional 2 minutes.
  7. Remove from heat and stir in fresh basil and cilantro leaves.
  8. Serve the Thai green curry sauce over steamed rice or noodles.
  9. Garnish with additional fresh basil and cilantro, if desired.
