Tacos de Carnitas

These delicious Tacos de Carnitas are made with tender, slow-cooked pork, topped with fresh toppings and served in warm tortillas.

Ingredients

  • Lime wedges - For serving
  • Salsa - 1/2 cup
  • Onion - 1/2 cup, diced
  • Cilantro - 1/2 cup, chopped
  • Corn tortillas - 12
  • Pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Oregano - 1 teaspoon
  • Cumin - 1 teaspoon
  • Garlic - 4 cloves, minced
  • Lime - 2, juiced
  • Orange - 1, juiced
  • Pork shoulder - 2 pounds

Instructions

  1. In a slow cooker, combine the pork shoulder, orange juice, lime juice, minced garlic, cumin, oregano, salt, and pepper.
  2. Cover and cook on low heat for 8 hours, or until the pork is tender and easily shreds with a fork.
  3. Once the pork is cooked, remove it from the slow cooker and shred it using two forks.
  4. Heat a skillet over medium heat and warm the corn tortillas for about 30 seconds on each side.
  5. To assemble the tacos, place a spoonful of the shredded pork onto each tortilla.
  6. Top with chopped cilantro, diced onion, and salsa.
  7. Serve the tacos with lime wedges on the side.
