Sweet Potato Pancakes

These fluffy and delicious sweet potato pancakes are perfect for a cozy breakfast or brunch.

Ingredients

  • Maple syrup - For serving
  • Butter - 2 tablespoons, melted
  • Vanilla extract - 1 teaspoon
  • Egg - 1
  • Milk - 1 cup
  • Salt - 1/2 teaspoon
  • Nutmeg - 1/2 teaspoon
  • Cinnamon - 1 teaspoon
  • Baking powder - 1 teaspoon
  • All - purpose flour - 1 cup
  • Sweet potatoes - 2 medium, cooked and mashed

Instructions

  1. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  2. In a separate bowl, mix together the mashed sweet potatoes, milk, egg, vanilla extract, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  5. Scoop 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.
  6. Repeat with the remaining batter.
  7. Serve the sweet potato pancakes warm with maple syrup.
