Surf and Turf Eggs Benedict

A luxurious twist on a classic breakfast dish, featuring tender steak and succulent lobster.

Ingredients

  • Chives - For garnish
  • Salt and pepper - To taste
  • Butter - 2 tablespoons
  • Hollandaise sauce - 1 cup
  • Eggs - 8
  • Lobster tails - 4, cooked and meat removed
  • Steak - 4 small fillets
  • English muffins - 4, split and toasted

Instructions

  1. Season the steak fillets with salt and pepper, then cook to your desired level of doneness in a skillet with the butter.
  2. Poach the eggs in a pot of simmering water until the whites are set but the yolks are still runny.
  3. Place a toasted English muffin half on each plate, then top with a steak fillet and a portion of lobster meat.
  4. Place a poached egg on top of each stack, then drizzle with the hollandaise sauce.
  5. Garnish with chives before serving.
