Supu ya Kuku is a traditional Kenyan chicken soup made with flavorful spices and vegetables.
Ingredients
Fresh cilantro - For garnish
Water - 6 cups
Vegetable oil - 2 tablespoons
Turmeric powder - 1 teaspoon
Curry powder - 1 tablespoon
Black pepper - To taste
Salt - To taste
Cabbage - 1/4 small head, shredded
Green bell pepper - 1, diced
Carrots - 2 medium, sliced
Potatoes - 2 large, diced
Tomatoes - 2 medium, chopped
Ginger - 1 tablespoon, grated
Garlic - 3 cloves, minced
Onion - 1 large, chopped
Chicken - 1 whole, cut into pieces
Instructions
In a large pot, heat the vegetable oil over medium heat.
Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
Add the chicken pieces and cook until browned on all sides.
Add the chopped tomatoes, diced potatoes, sliced carrots, diced green bell pepper, and shredded cabbage. Stir well.
Season with salt, black pepper, curry powder, and turmeric powder. Mix to coat the ingredients.
Pour in the water and bring to a boil. Reduce the heat and simmer for 45 minutes, or until the chicken is cooked through and the vegetables are tender.
