Marqa

Marqa is a traditional Somali stew made with meat, vegetables, and aromatic spices.

Ingredients

  • Fresh lemon juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Water - 4 cups
  • Salt - To taste
  • Cayenne pepper - 1/2 teaspoon
  • Coriander - 1 teaspoon
  • Cumin - 1 teaspoon
  • Turmeric - 1 teaspoon
  • Vegetable oil - 2 tablespoons
  • Green bell pepper - 1, diced
  • Carrots - 2 large, peeled and sliced
  • Potatoes - 4 medium, peeled and cubed
  • Tomatoes - 2 large, chopped
  • Ginger - 1 tablespoon, grated
  • Garlic - 4 cloves, minced
  • Onion - 1 large, finely chopped
  • Lamb or beef - 1 kg, cubed

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger, and cook for another 2 minutes.
  4. Add the cubed meat to the pot and brown on all sides.
  5. Stir in the turmeric, cumin, coriander, cayenne pepper, and salt.
  6. Add the chopped tomatoes and cook for 5 minutes, until they start to break down.
  7. Pour in the water and bring the mixture to a boil.
  8. Reduce the heat to low, cover the pot, and simmer for 30 minutes.
  9. Add the cubed potatoes, sliced carrots, and diced green bell pepper to the pot.
  10. Cover the pot again and simmer for another 20 minutes, or until the vegetables are tender.
  11. Stir in the chopped cilantro and fresh lemon juice.
  12. Taste and adjust the seasoning if needed.
  13. Serve the marqa hot with rice or bread.
