Steelhead with Pesto Pasta

This delicious steelhead trout is served with a flavorful pesto pasta.

Ingredients

  • Parmesan cheese - 1/4 cup, grated
  • Fresh basil - 1/4 cup, chopped
  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 1 cup, halved
  • Pasta - 8 ounces
  • Pesto sauce - 1/4 cup
  • Steelhead trout fillets - 2 fillets

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Season the steelhead trout fillets with salt and pepper.
  3. Heat olive oil in a skillet over medium heat. Add the trout fillets and cook for 3-4 minutes per side, or until cooked through.
  4. In a separate pan, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
  5. Add cherry tomatoes to the pan and cook for 2-3 minutes, until slightly softened.
  6. Add cooked pasta to the pan and toss with pesto sauce.
  7. Remove from heat and stir in chopped fresh basil.
  8. Serve the steelhead trout fillets on top of the pesto pasta.
  9. Sprinkle with grated Parmesan cheese.
  10. Enjoy!
