Onion and Garlic Shrimp Pasta

Ingredients

  • Parmesan cheese - 1/2 cup, grated
  • Salt and pepper - To taste
  • Red pepper flakes - 1/2 teaspoon
  • Fresh basil - 1/4 cup, chopped
  • Cherry tomatoes - 1 cup, halved
  • Garlic - 4 cloves, minced
  • Onion - 1 large, thinly sliced
  • Olive oil - 2 tablespoons
  • Shrimp - 1 pound, peeled and deveined
  • Pasta - 8 ounces

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the sliced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant, about 5 minutes.
  4. Add the shrimp to the skillet and cook until pink and cooked through, about 3-4 minutes per side.
  5. Add the cherry tomatoes, chopped basil, red pepper flakes, salt, and pepper. Cook for an additional 2 minutes, until the tomatoes are slightly softened.
  6. Add the cooked pasta to the skillet and toss to combine with the shrimp and tomato mixture.
  7. Remove from heat and sprinkle with grated Parmesan cheese.
