Spinach and White Bean Pasta

This delicious pasta dish combines fresh spinach, creamy white beans, and flavorful herbs for a satisfying and nutritious meal.

Ingredients

  • Parmesan cheese - 1/4 cup, grated
  • Salt and pepper - To taste
  • Red pepper flakes - 1/2 teaspoon
  • Dried oregano - 1 teaspoon
  • White beans - 1 can (15 ounces), drained and rinsed
  • Spinach - 4 cups, fresh
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Pasta - 8 ounces

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Stir in the white beans, dried oregano, red pepper flakes, salt, and pepper. Cook for another 2 minutes to heat through.
  6. Add the cooked pasta to the skillet and toss to combine with the spinach and white bean mixture.
  7. Remove from heat and sprinkle with grated Parmesan cheese.
