Spinach and Mushroom Stuffed Pork Loin

This delicious pork loin is stuffed with a flavorful mixture of spinach and mushrooms, creating a savory and satisfying main course.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Breadcrumbs - 1/2 cup
  • Parmesan cheese - 1/2 cup, grated
  • Garlic - 3 cloves, minced
  • Mushrooms - 1 cup, sliced
  • Spinach - 2 cups, chopped
  • Pork loin - 2 pounds

Instructions

  1. Preheat the oven to 375°F.
  2. Butterfly the pork loin by making a lengthwise cut down the center, without cutting all the way through.
  3. Open up the pork loin and flatten it with a meat mallet until it is an even thickness.
  4. In a skillet, heat the olive oil over medium heat.
  5. Add the mushrooms and garlic, and cook until the mushrooms are tender and any liquid has evaporated.
  6. Add the chopped spinach and cook until wilted.
  7. Remove the skillet from heat and stir in the grated Parmesan cheese and breadcrumbs.
  8. Season the pork loin with salt and pepper.
  9. Spread the spinach and mushroom mixture evenly over the pork loin.
  10. Roll up the pork loin tightly and secure with kitchen twine.
  11. Place the stuffed pork loin on a baking sheet and roast in the preheated oven for 45-50 minutes, or until the internal temperature reaches 145°F.
  12. Remove from the oven and let the pork loin rest for 10 minutes before slicing.
  13. Slice the stuffed pork loin and serve.
