Spinach and Mushroom Omelette

Spinach and Mushroom Omelette

This delicious omelette is filled with sautéed spinach and mushrooms, and topped with melted cheese.

Ingredients

  • Olive oil - 1 tablespoon
  • Pepper - To taste
  • Salt - To taste
  • Cheese - 1/4 cup, shredded
  • Mushrooms - 1/2 cup, sliced
  • Spinach - 1 cup, chopped
  • Eggs - 2

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add mushrooms and sauté until they release their moisture and become golden brown, about 5 minutes.
  3. Add chopped spinach to the skillet and cook until wilted, about 2 minutes.
  4. In a bowl, whisk the eggs with salt and pepper.
  5. Pour the whisked eggs into the skillet with the spinach and mushrooms.
  6. Cook the omelette for 2-3 minutes, or until the edges are set.
  7. Sprinkle shredded cheese over one half of the omelette.
  8. Fold the other half of the omelette over the cheese.
  9. Cook for another 1-2 minutes, or until the cheese is melted and the omelette is cooked through.
  10. Slide the omelette onto a plate and serve hot.
