Spinach and Artichoke Mac and Cheese

A creamy and delicious combination of spinach, artichokes, and macaroni, topped with a generous layer of cheese.

Ingredients

  • Salt and pepper - To taste
  • Artichoke hearts - 1 cup, chopped
  • Spinach - 2 cups, chopped
  • Mozzarella cheese - 1 cup, shredded
  • Parmesan cheese - 1 cup, grated
  • Cream cheese - 4 ounces
  • Milk - 2 cups
  • Flour - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Butter - 2 tablespoons
  • Macaroni - 2 cups

Instructions

  1. Preheat your oven to 375°F.
  2. Cook the macaroni according to the package instructions, then drain and set aside.
  3. In a large pot, melt the butter over medium heat. Add the garlic and cook until fragrant.
  4. Stir in the flour to create a roux, then gradually whisk in the milk until smooth.
  5. Add the cream cheese and stir until melted.
  6. Stir in the Parmesan and half of the mozzarella until melted, then add the spinach, artichokes, salt, and pepper.
  7. Add the cooked macaroni to the pot and stir until well coated in the sauce.
  8. Transfer the mixture to a baking dish and top with the remaining mozzarella.
  9. Bake for 20 minutes, or until the cheese is melted and bubbly.
