Spicy Tofu Stew

This spicy tofu stew is a flavorful and comforting Korean dish made with soft tofu, vegetables, and a spicy broth.

Ingredients

  • Black pepper - To taste
  • Salt - To taste
  • Green onions - 4, chopped
  • Mushrooms - 8 oz, sliced
  • Zucchini - 1, sliced
  • Sesame oil - 1 tablespoon
  • Gochujang (korean red pepper paste) - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1, sliced
  • Vegetable broth - 4 cups
  • Soft tofu - 1 block (14 oz), cubed

Instructions

  1. In a large pot, heat the sesame oil over medium heat.
  2. Add the onion, garlic, and ginger. Sauté until fragrant and the onion is translucent.
  3. Add the vegetable broth, soy sauce, and gochujang. Stir well to combine.
  4. Bring the broth to a boil, then reduce the heat to low.
  5. Add the tofu, zucchini, mushrooms, and green onions to the pot. Simmer for 15-20 minutes, or until the vegetables are tender.
  6. Season with salt and black pepper to taste.
  7. Serve hot and enjoy!
