Spicy Seafood Chowder

This creamy and flavorful seafood chowder is packed with a variety of seafood and a spicy kick.

Ingredients

  • Salt and pepper - To taste
  • Fresh parsley - 2 tablespoons, chopped
  • Heavy cream - 1 cup
  • Cayenne pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Cajun seasoning - 1 tablespoon
  • Tomato paste - 2 tablespoons
  • Canned diced tomatoes - 1 can (14 oz)
  • Fish stock - 4 cups
  • Seafood mix (shrimp, scallops, mussels, etc.) - 1 lb
  • Red bell pepper - 1, diced
  • Potato - 2 medium, peeled and diced
  • Carrot - 2 medium, diced
  • Celery - 2 stalks, diced
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, diced
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, celery, carrot, and red bell pepper. Cook until the vegetables are softened, about 5 minutes.
  3. Add the seafood mix and cook for another 3 minutes, until the seafood is partially cooked.
  4. Add the fish stock, diced tomatoes, tomato paste, Cajun seasoning, paprika, and cayenne pepper. Stir well to combine.
  5. Bring the chowder to a boil, then reduce the heat and simmer for 20 minutes, until the flavors are well blended.
  6. Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes.
  7. Garnish with fresh parsley before serving.
  8. Serve hot and enjoy!
