Spicy Cabbage Soup with Chorizo

A hearty and warming soup packed with spicy chorizo and nutritious cabbage.

Ingredients

  • Salt and pepper - To taste
  • Cayenne pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Diced tomatoes - 1 can
  • Chicken broth - 4 cups
  • Cabbage - 1/2 head, shredded
  • Garlic - 2 cloves, minced
  • Onion - 1 large, chopped
  • Olive oil - 2 tablespoons
  • Chorizo - 200g, diced

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chorizo and cook until browned, about 5 minutes.
  3. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  4. Add the cabbage, chicken broth, diced tomatoes, paprika, cayenne pepper, salt, and pepper. Bring to a boil.
  5. Reduce the heat and simmer for 20 minutes, or until the cabbage is tender.
  6. Serve the soup hot, garnished with extra chorizo if desired.
