Cabbage and Turkey Soup

This hearty cabbage and turkey soup is packed with flavor and nutritious ingredients.

Ingredients

  • Salt and pepper - To taste
  • Dried thyme - 1 teaspoon
  • Bay leaf - 1
  • Diced tomatoes - 1 can (14.5 oz)
  • Chicken broth - 6 cups
  • Ground turkey - 1 pound
  • Cabbage - 1 small head, shredded
  • Celery - 2 stalks, sliced
  • Carrots - 2 medium, sliced
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, diced
  • Olive oil - 2 tablespoons

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and cook until the onion is translucent, about 5 minutes.
  3. Add the carrots, celery, and cabbage, and cook for another 5 minutes.
  4. Push the vegetables to one side of the pot and add the ground turkey. Cook until browned, breaking it up into small pieces.
  5. Stir in the chicken broth, diced tomatoes, bay leaf, thyme, salt, and pepper.
  6. Bring the soup to a boil, then reduce the heat and simmer for 30 minutes.
  7. Remove the bay leaf before serving.
  8. Serve hot and enjoy!
