Soupe de Poireaux

Soupe de Poireaux, also known as Leek Soup, is a classic French soup made with leeks, potatoes, and cream.

Ingredients

  • Chives - 2 tablespoons, chopped (for garnish)
  • Salt and pepper - To taste
  • Heavy cream - 1/2 cup
  • Chicken or vegetable broth - 4 cups
  • Butter - 2 tablespoons
  • Potatoes - 2 medium, peeled and diced
  • Leeks - 4 large, white and light green parts only, sliced

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the leeks and sauté until softened, about 5 minutes.
  3. Add the potatoes and broth. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the potatoes are tender.
  4. Using an immersion blender or a regular blender, puree the soup until smooth.
  5. Stir in the heavy cream and season with salt and pepper to taste.
  6. Simmer for an additional 5 minutes to heat through.
  7. Serve hot, garnished with chopped chives.
