Sopa de Res is a traditional Latin American beef soup packed with vegetables and flavorful broth.
Ingredients
Salt and pepper - To taste
Cilantro - 1/4 cup, chopped
Tomatoes - 2 medium, diced
Cabbage - 1/2 small head, shredded
Green beans - 1 cup, chopped
Corn - 1 cup, frozen or canned
Potatoes - 2 medium, diced
Carrots - 3 medium, sliced
Garlic - 4 cloves, minced
Onion - 1 large, chopped
Water - 8 cups
Beef shank - 2 pounds
Instructions
In a large pot, bring the water to a boil.
Add the beef shank and cook for 1 hour, skimming off any foam that rises to the surface.
Add the chopped onion, minced garlic, sliced carrots, diced potatoes, corn, green beans, shredded cabbage, diced tomatoes, and chopped cilantro to the pot.
Season with salt and pepper to taste.
Simmer for an additional hour, or until the beef is tender and the vegetables are cooked through.
Remove the beef shank from the pot and shred the meat using two forks.
Return the shredded beef to the pot and stir to combine.
