Somlar Maju Kreung

Somlar Maju Kreung is a traditional Cambodian sour soup made with a flavorful blend of spices and herbs.

Ingredients

  • Fresh cilantro - For garnish
  • Lime juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Shallots - 2, thinly sliced
  • Red chili peppers - 2, sliced
  • Salt - To taste
  • Palm sugar - 1 tablespoon
  • Fish sauce - 2 tablespoons
  • Tamarind paste - 2 tablespoons
  • Kaffir lime leaves - 4 leaves
  • Galangal - 2 slices
  • Lemongrass - 2 stalks, bruised
  • Chicken - 500 grams, bone-in

Instructions

  1. In a large pot, bring water to a boil and add the chicken, lemongrass, galangal, and kaffir lime leaves. Simmer for 20 minutes until the chicken is cooked through.
  2. Remove the chicken from the pot and shred the meat. Set aside.
  3. Strain the broth and return it to the pot. Discard the lemongrass, galangal, and kaffir lime leaves.
  4. Add tamarind paste, fish sauce, palm sugar, salt, red chili peppers, shallots, and garlic to the broth. Simmer for 10 minutes to allow the flavors to meld together.
  5. Add the shredded chicken back to the pot and simmer for an additional 5 minutes.
  6. Stir in lime juice and adjust the seasoning if needed.
  7. Serve hot, garnished with fresh cilantro.
