Ingredients

  • Salt and pepper - To taste
  • Paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Red onion - 1, sliced
  • Bell peppers - 2, sliced
  • Carrots - 4 medium, sliced
  • Potatoes - 4 medium, diced
  • Smoked sausage - 1 pound

Instructions

  1. Preheat the oven to 400°F.
  2. Place the diced potatoes, sliced carrots, bell peppers, and red onion on a baking sheet.
  3. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper. Toss to coat the vegetables evenly.
