Slow Cooker Bottom Round Roast

This tender and juicy bottom round roast is slow cooked to perfection with a flavorful blend of herbs and spices.

Ingredients

  • Water - 2 tablespoons
  • Cornstarch - 2 tablespoons
  • Beef broth - 1 cup
  • Salt and pepper - To taste
  • Dried rosemary - 1 tablespoon
  • Dried thyme - 1 tablespoon
  • Onion powder - 1 tablespoon
  • Garlic powder - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Bottom round roast - 3 pounds

Instructions

  1. In a small bowl, mix together the garlic powder, onion powder, thyme, rosemary, salt, and pepper.
  2. Rub the spice mixture all over the bottom round roast.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Add the roast and sear on all sides until browned, about 5 minutes per side.
  5. Transfer the roast to a slow cooker.
  6. Pour the beef broth over the roast.
  7. Cover and cook on low for 8 hours, or until the roast is tender and cooked through.
  8. In a small bowl, whisk together the cornstarch and water.
  9. Stir the cornstarch mixture into the slow cooker and cook on high for an additional 30 minutes, or until the sauce has thickened.
  10. Slice the roast and serve with the thickened sauce.
