This delicious burrito combines the flavors of shrimp and grits in a convenient handheld form.
Ingredients
Fresh cilantro - 2 tablespoons, chopped
Sour cream - 1/4 cup
Cheddar cheese - 1/2 cup, shredded
Flour tortillas - 2 large
Salt and pepper - To taste
Cajun seasoning - 1 teaspoon
Garlic - 2 cloves, minced
Onion - 1/4 cup, diced
Bell peppers - 1/2 cup, diced
Grits - 1 cup, cooked
Shrimp - 1/2 pound, peeled and deveined
Instructions
In a large skillet, heat some oil over medium heat.
Add the bell peppers, onion, and garlic. Cook until softened, about 5 minutes.
Season the shrimp with Cajun seasoning, salt, and pepper. Add the shrimp to the skillet and cook until pink and cooked through, about 3-4 minutes per side.
Warm the flour tortillas in a separate skillet or in the microwave.
Spread a layer of cooked grits onto each tortilla.
Divide the cooked shrimp and sautéed vegetables evenly among the tortillas.
