Shrimp and Grits Burrito

This delicious burrito combines the flavors of shrimp and grits in a convenient handheld form.

Ingredients

  • Fresh cilantro - 2 tablespoons, chopped
  • Sour cream - 1/4 cup
  • Cheddar cheese - 1/2 cup, shredded
  • Flour tortillas - 2 large
  • Salt and pepper - To taste
  • Cajun seasoning - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Onion - 1/4 cup, diced
  • Bell peppers - 1/2 cup, diced
  • Grits - 1 cup, cooked
  • Shrimp - 1/2 pound, peeled and deveined

Instructions

  1. In a large skillet, heat some oil over medium heat.
  2. Add the bell peppers, onion, and garlic. Cook until softened, about 5 minutes.
  3. Season the shrimp with Cajun seasoning, salt, and pepper. Add the shrimp to the skillet and cook until pink and cooked through, about 3-4 minutes per side.
  4. Warm the flour tortillas in a separate skillet or in the microwave.
  5. Spread a layer of cooked grits onto each tortilla.
  6. Divide the cooked shrimp and sautéed vegetables evenly among the tortillas.
  7. Top with shredded cheddar cheese, sour cream, and fresh cilantro.
  8. Roll up the tortillas tightly to form burritos.
  9. Serve hot and enjoy!
