Scallop Chowder

This creamy and flavorful scallop chowder is made with fresh scallops, potatoes, vegetables, and herbs.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Bay leaf - 1
  • Thyme - 1 teaspoon
  • Milk - 2 cups
  • Chicken broth - 4 cups
  • All - purpose flour - 2 tablespoons
  • Butter - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Carrot - 1 large, diced
  • Celery - 2 stalks, chopped
  • Onion - 1 medium, chopped
  • Potatoes - 2 large, diced
  • Scallops - 1 pound, fresh

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion, celery, carrot, and garlic. Cook until the vegetables are tender, about 5 minutes.
  3. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the chicken broth and milk.
  5. Add the potatoes, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potatoes are cooked through.
  6. Add the scallops and cook for 5 minutes, or until they are opaque and cooked through.
  7. Remove the bay leaf and stir in the fresh parsley.
  8. Serve hot and enjoy!
