This creamy and flavorful lobster chowder is made with fresh lobster meat, potatoes, and vegetables.
Ingredients
Fresh parsley - 2 tablespoons, chopped
Salt and pepper - To taste
Thyme - 1 teaspoon
Bay leaf - 1
Milk - 2 cups
Chicken broth - 4 cups
All - purpose flour - 2 tablespoons
Potatoes - 2 medium, peeled and diced
Carrot - 1 large, diced
Celery - 2 stalks, diced
Onion - 1 medium, diced
Butter - 2 tablespoons
Lobster meat - 1 pound, cooked and chopped
Instructions
In a large pot, melt the butter over medium heat.
Add the onion, celery, and carrot. Cook until the vegetables are softened, about 5 minutes.
Stir in the flour and cook for 1 minute.
Gradually whisk in the chicken broth and milk.
Add the potatoes, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the potatoes are tender.
Add the chopped lobster meat and cook for an additional 5 minutes.
Remove the bay leaf and season with additional salt and pepper if needed.
