Lobster Chowder

This creamy and flavorful lobster chowder is made with fresh lobster meat, potatoes, and vegetables.

Ingredients

  • Fresh parsley - 2 tablespoons, chopped
  • Salt and pepper - To taste
  • Thyme - 1 teaspoon
  • Bay leaf - 1
  • Milk - 2 cups
  • Chicken broth - 4 cups
  • All - purpose flour - 2 tablespoons
  • Potatoes - 2 medium, peeled and diced
  • Carrot - 1 large, diced
  • Celery - 2 stalks, diced
  • Onion - 1 medium, diced
  • Butter - 2 tablespoons
  • Lobster meat - 1 pound, cooked and chopped

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion, celery, and carrot. Cook until the vegetables are softened, about 5 minutes.
  3. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the chicken broth and milk.
  5. Add the potatoes, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the potatoes are tender.
  6. Add the chopped lobster meat and cook for an additional 5 minutes.
  7. Remove the bay leaf and season with additional salt and pepper if needed.
  8. Serve hot, garnished with fresh parsley.
