A hearty twist on the classic eggs benedict, featuring savory sausage gravy over perfectly poached eggs and toasted English muffins.

Ingredients

  • Salt and pepper - To taste
  • Milk - 2 cups
  • Flour - 1/4 cup
  • Butter - 1/4 cup
  • Sausage - 1 pound, cooked and crumbled
  • Eggs - 4, poached
  • English muffins - 4, split and toasted

Instructions

  1. Cook the sausage in a large skillet over medium heat until browned and crumbled. Remove from the skillet and set aside.
  2. In the same skillet, melt the butter. Stir in the flour to create a roux and cook for 2 minutes.
  3. Slowly whisk in the milk until smooth. Bring to a simmer and cook until thickened.
  4. Stir the cooked sausage into the gravy and season with salt and pepper.
  5. To assemble the eggs benedict, place a poached egg on each toasted English muffin half. Top with the sausage gravy.
