Sankhya Lapov is a traditional Indian dish made with lentils, vegetables, and aromatic spices.
Ingredients
Fresh coriander leaves - 2 tablespoons, chopped
Oil - 2 tablespoons
Salt - To taste
Garam masala - 1/2 teaspoon
Cumin powder - 1 teaspoon
Coriander powder - 1 teaspoon
Red chili powder - 1/2 teaspoon
Turmeric powder - 1/2 teaspoon
Garlic - 3 cloves, minced
Ginger - 1-inch piece, grated
Green chilies - 2, slit
Tomato - 1, finely chopped
Onion - 1, finely chopped
Water - 3 cups
Toor dal (split pigeon peas) - 1 cup
Instructions
Rinse the toor dal under running water until the water runs clear.
In a pressure cooker, add the rinsed toor dal, water, chopped onion, tomato, green chilies, grated ginger, minced garlic, turmeric powder, red chili powder, coriander powder, cumin powder, and salt.
Close the pressure cooker and cook on medium heat for 4-5 whistles, or until the dal is cooked and soft.
Once the pressure is released, open the cooker and give the dal a good stir.
Heat oil in a pan over medium heat.
Add the cooked dal to the pan and simmer for 5-10 minutes, stirring occasionally.
Garnish with fresh coriander leaves and serve hot with rice or roti.
