Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Fresh dill - 2 tablespoons, chopped
  • Lemon - 1, sliced
  • Garlic - 4 cloves, minced
  • Red onion - 1, sliced
  • Red bell pepper - 1, sliced
  • Yellow squash - 1, sliced
  • Zucchini - 1, sliced
  • Salmon fillets - 4

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut 4 large pieces of aluminum foil, approximately 12x12 inches each.
  3. Place a salmon fillet in the center of each foil piece.
  4. Divide the sliced zucchini, yellow squash, red bell pepper, red onion, minced garlic, lemon slices, and chopped dill evenly among the foil packets, arranging them around the salmon.
  5. Drizzle each packet with olive oil and season with salt and pepper.
  6. Fold the foil over the salmon and vegetables, sealing the edges tightly to create a packet.
  7. Place the foil packets on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.
  8. Carefully open the foil packets, being cautious of the hot steam, and transfer the salmon and veggies to plates.
