Halibut and Veggie Foil Packets

These delicious halibut and veggie foil packets are a healthy and flavorful meal option. The halibut is cooked to perfection with a medley of fresh vegetables, herbs, and seasonings.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Fresh lemon - 1, sliced
  • Fresh basil - 1/4 cup, chopped
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 1 cup
  • Red onion - 1, sliced
  • Red bell pepper - 1, sliced
  • Yellow squash - 1, sliced
  • Zucchini - 1, sliced
  • Halibut fillets - 4 fillets

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut four large pieces of aluminum foil, approximately 12x12 inches each.
  3. Place a halibut fillet in the center of each foil piece.
  4. In a bowl, combine the zucchini, yellow squash, red bell pepper, red onion, cherry tomatoes, garlic, basil, olive oil, salt, and pepper. Toss to coat the vegetables evenly.
  5. Divide the vegetable mixture evenly among the foil packets, placing it on top of the halibut fillets.
  6. Top each packet with a few slices of lemon.
  7. Fold the foil over the halibut and vegetables, sealing the edges tightly to create a packet.
  8. Place the foil packets on a baking sheet and bake for 15-20 minutes, or until the halibut is cooked through and the vegetables are tender.
  9. Carefully open the foil packets, being cautious of the hot steam, and transfer the halibut and vegetables to serving plates.
  10. Serve hot and enjoy!
