Sabudana Kheer

Sabudana Kheer is a delicious Indian dessert made with tapioca pearls, milk, sugar, and flavored with cardamom and saffron.

Ingredients

  • Almonds - 10, sliced
  • Raisins - 10
  • Cashews - 10, chopped
  • Saffron strands - a pinch
  • Cardamom powder - 1/2 teaspoon
  • Sugar - 1/2 cup
  • Milk - 4 cups
  • Sabudana (tapioca pearls) - 1/2 cup

Instructions

  1. Wash the sabudana (tapioca pearls) thoroughly and soak them in water for 2 hours.
  2. Drain the soaked sabudana and keep aside.
  3. In a large saucepan, heat the milk over medium heat until it comes to a boil.
  4. Add the drained sabudana to the boiling milk and stir well.
  5. Reduce the heat to low and let the sabudana cook in the milk for about 20 minutes, stirring occasionally.
  6. Add sugar, cardamom powder, saffron strands, cashews, raisins, and almonds to the kheer.
  7. Cook for another 5-10 minutes until the sabudana is soft and the kheer thickens.
  8. Remove from heat and let it cool for a few minutes.
  9. Serve the sabudana kheer warm or chilled, garnished with additional nuts and saffron strands if desired.
