Rhubarb and Watermelon Salad

This refreshing salad combines the tartness of rhubarb with the sweetness of watermelon for a perfect summer dish.

Ingredients

  • Black pepper - To taste

  • Feta cheese - 1/2 cup, crumbled
  • Honey - 1 tablespoon
  • Lime juice - 2 tablespoons
  • Fresh mint leaves - 1/4 cup, chopped
  • Watermelon - 4 cups, cubed
  • Rhubarb - 2 stalks, thinly sliced

Instructions

  1. In a large bowl, combine the sliced rhubarb, watermelon cubes, and chopped mint leaves.
