Red Bean Soup

A hearty and nutritious soup made from red beans and a blend of spices. It's a perfect comfort food for cold weather.

Ingredients

  • Salt and pepper - To taste
  • Bay leaf - 1
  • Celery - 1 stalk, chopped
  • Carrot - 1, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1, chopped
  • Water - 4 cups
  • Red beans - 1 cup, soaked overnight

Instructions

  1. Rinse the soaked beans and place them in a large pot with the water, onion, garlic, carrot, celery, and bay leaf.
  2. Bring the mixture to a boil over high heat, then reduce the heat to low and let it simmer for about 2 hours, or until the beans are tender.
  3. Remove the bay leaf and use a blender or immersion blender to puree the soup until it's smooth.
  4. Return the soup to the heat and season it with salt and pepper to taste. Let it simmer for a few more minutes before serving.
