Ingredients
Maple syrup - For serving
Vegetable oil - 2 tablespoons
Salt - 1/2 teaspoon
Pumpkin pie spice - 1 teaspoon
Baking powder - 2 teaspoons
Brown sugar - 2 tablespoons
Egg - 1
Milk - 1 cup
Pumpkin puree - 1/2 cup
All - purpose flour - 1 1/2 cups
Instructions
In a large bowl, whisk together the flour, brown sugar, baking powder, pumpkin pie spice, and salt.
In a separate bowl, whisk together the pumpkin puree, milk, egg, and vegetable oil.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Heat a non-stick skillet or griddle over medium heat and lightly grease with oil or cooking spray.
