Garlic and Zucchini Stuffed Mushrooms

These garlic and zucchini stuffed mushrooms are a delicious and healthy appetizer option.

Ingredients

  • Salt and pepper - To taste
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Parmesan cheese - 1/4 cup, grated
  • Breadcrumbs - 1/2 cup
  • Garlic - 3 cloves, minced
  • Zucchini - 1 medium, grated
  • Large mushrooms - 12

Instructions

  1. Preheat the oven to 375°F.
  2. Remove the stems from the mushrooms and set aside.
  3. In a large bowl, combine the grated zucchini, minced garlic, breadcrumbs, Parmesan cheese, chopped parsley, olive oil, salt, and pepper.
  4. Stuff each mushroom cap with the zucchini mixture and place them on a baking sheet.
  5. Chop the mushroom stems and sprinkle them over the stuffed mushrooms.
  6. Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
  7. Serve hot and enjoy!
