Prawn Mango and Avocado Salad

This refreshing salad combines juicy prawns, sweet mango, creamy avocado, and a tangy dressing.

Ingredients

  • Salt and pepper - To taste
  • Honey - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Red onion - 1/4 cup, thinly sliced
  • Mixed salad greens - 4 cups
  • Avocado - 1, diced
  • Mango - 1, diced
  • Prawns - 200g

Instructions

  1. Cook the prawns in boiling water for 2-3 minutes, or until they turn pink. Drain and set aside.
  2. In a large bowl, combine the mango, avocado, mixed salad greens, red onion, and cilantro.
  3. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper to make the dressing.
  4. Add the cooked prawns to the salad and drizzle with the dressing.
  5. Toss gently to combine all the ingredients.
  6. Serve immediately and enjoy!
