Ingredients

  • Olive oil - 2 tablespoons
  • Black pepper - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Cheddar cheese - 1 cup, shredded
  • Milk - 1/4 cup
  • Eggs - 6
  • Onion - 1 large, thinly sliced
  • Potatoes - 3 medium, peeled and thinly sliced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Add the sliced potatoes and onion to the skillet and cook until the potatoes are golden and tender, about 10 minutes.
  4. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper.
  5. Pour the egg mixture over the cooked potatoes and onion in the skillet.
  6. Sprinkle the shredded cheddar cheese evenly over the top.
  7. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the frittata is set and the cheese is melted and golden.
