Portuguese Cozido a Portuguesa with Chourico and Mushrooms

Cozido a Portuguesa is a traditional Portuguese dish made with a variety of meats, vegetables, and spices. This version includes chourico sausage and mushrooms for added flavor.

Ingredients

  • Water - 6 cups
  • Salt and pepper - To taste
  • Paprika - 1 tablespoon
  • Bay leaves - 2
  • Mushrooms - 8 ounces, sliced
  • Garlic - 4 cloves, minced
  • Onion - 1, chopped
  • Cabbage - 1/2 head, chopped
  • Potatoes - 4, peeled and quartered
  • Carrots - 4, peeled and sliced
  • Chicken thighs - 1 pound
  • Pork ribs - 1 pound
  • Beef stew meat - 1 pound, cubed
  • Chourico sausage - 1 pound, sliced

Instructions

  1. In a large pot, heat some olive oil over medium heat.
  2. Add the chourico sausage and cook until browned. Remove from the pot and set aside.
  3. In the same pot, add the beef stew meat, pork ribs, and chicken thighs. Cook until browned on all sides.
  4. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  5. Add the sliced mushrooms, carrots, potatoes, and cabbage to the pot.
  6. Sprinkle the paprika over the ingredients in the pot. Season with salt and pepper to taste.
  7. Add the bay leaves and pour in the water.
  8. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 3 hours, or until the meats are tender and the flavors have melded together.
  9. Serve the Cozido a Portuguesa hot, with the meats and vegetables arranged on a platter. Enjoy!
