Cozido a Portuguesa

Cozido à Portuguesa is a traditional Portuguese dish consisting of a variety of meats, sausages, and vegetables cooked together in a flavorful broth.

Ingredients

  • Salt and pepper - To taste
  • Bay leaves - 2
  • Garlic - 3 cloves, minced
  • Onion - 1, chopped
  • Turnip - 1, peeled and chopped
  • Cabbage - 1/2 head, chopped
  • Potatoes - 4, peeled and quartered
  • Carrots - 3, peeled and chopped
  • Blood sausage - 200g
  • Chouriço sausage - 200g
  • Chicken thighs - 500g
  • Pork ribs - 500g
  • Beef brisket - 500g

Instructions

  1. In a large pot, add the beef brisket, pork ribs, and chicken thighs. Cover with water and bring to a boil. Skim off any impurities that rise to the surface.
  2. Reduce the heat to low and simmer for 1 hour.
  3. Add the chouriço sausage, blood sausage, carrots, potatoes, cabbage, turnip, onion, garlic, bay leaves, salt, and pepper to the pot.
  4. Continue to simmer for another 2 hours, or until the meats are tender and the vegetables are cooked through.
  5. Remove the meats and vegetables from the pot and arrange them on a serving platter.
  6. Slice the meats and serve with the cooked vegetables and some of the broth.
  7. Enjoy the Cozido à Portuguesa with crusty bread and a glass of red wine.
