Pork Stir Fry

This delicious pork stir fry is packed with flavor and colorful vegetables.

Ingredients

  • Cooking oil - 2 tablespoons
  • Salt and pepper - To taste
  • Water - 1/4 cup
  • Cornstarch - 1 tablespoon
  • Green onions - 4, sliced
  • Snow peas - 1 cup
  • Carrots - 2, julienned
  • Bell peppers - 2, sliced
  • Broccoli - 2 cups, florets
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Sesame oil - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Pork tenderloin - 1 pound, thinly sliced

Instructions

  1. In a bowl, marinate the sliced pork tenderloin with soy sauce, sesame oil, minced garlic, and grated ginger. Let it sit for 10 minutes.
  2. Heat cooking oil in a large skillet or wok over high heat.
  3. Add the marinated pork and stir fry until cooked through, about 5 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the broccoli, bell peppers, carrots, and snow peas. Stir fry for 3-4 minutes, until the vegetables are crisp-tender.
  5. In a small bowl, mix cornstarch and water to make a slurry.
  6. Push the vegetables to one side of the skillet and pour the cornstarch slurry into the empty space. Cook for 1 minute, until the sauce thickens.
  7. Add the cooked pork back into the skillet and toss everything together to coat in the sauce.
  8. Season with salt and pepper to taste.
  9. Garnish with sliced green onions and serve hot.
