Bean sprouts - 1 cup
Green onions - 2, sliced
Soft - boiled eggs - 2
Ramen noodles - 8 ounces
Ginger - 1-inch piece, grated
Garlic - 2 cloves, minced
Mirin - 2 tablespoons
Soy sauce - 2 tablespoons
Chicken broth - 4 cups
Pork belly - 1/2 pound
Instructions
In a large pot, bring water to a boil. Add the pork belly and cook for 5 minutes to remove any impurities. Drain and rinse the pork belly.
In the same pot, combine the chicken broth, soy sauce, mirin, garlic, and ginger. Bring to a boil, then reduce the heat and simmer for 30 minutes.
While the broth is simmering, cook the ramen noodles according to the package instructions. Drain and set aside.
Heat a skillet over medium heat and add the sesame oil. Cook the pork belly for 2-3 minutes on each side, until browned and crispy. Remove from the skillet and let it rest for a few minutes before slicing.
Divide the cooked ramen noodles between two bowls. Pour the hot broth over the noodles.
Top each bowl with sliced pork belly, soft-boiled eggs, green onions, bean sprouts, and shredded nori sheets.
