Pork and Pineapple Stir Fry

This delicious stir fry combines tender pork with sweet pineapple for a flavorful and satisfying meal.

Ingredients

  • Cooked rice - 4 cups (for serving)
  • Green onions - 2, sliced (for garnish)
  • Salt and pepper - To taste
  • Vegetable oil - 2 tablespoons
  • Water - 1/4 cup
  • Cornstarch - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Oyster sauce - 2 tablespoons
  • Soy sauce - 3 tablespoons
  • Ginger - 1 tablespoon, grated
  • Garlic - 3 cloves, minced
  • Onion - 1, sliced
  • Bell peppers - 2, sliced
  • Pineapple chunks - 2 cups
  • Pork tenderloin - 1 lb, thinly sliced

Instructions

  1. In a small bowl, whisk together soy sauce, oyster sauce, sesame oil, cornstarch, and water. Set aside.
  2. Heat vegetable oil in a large skillet or wok over high heat.
  3. Add pork slices and cook until browned and cooked through, about 3-4 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add onion, bell peppers, garlic, and ginger. Stir fry for 2-3 minutes, until vegetables are slightly softened.
  5. Add pineapple chunks and cook for an additional 2 minutes.
  6. Return the cooked pork to the skillet and pour the sauce mixture over the ingredients.
  7. Stir fry for another 2 minutes, until the sauce thickens and coats the ingredients.
  8. Season with salt and pepper to taste.
  9. Serve the stir fry over cooked rice and garnish with sliced green onions.
